I'm not positive about this, but it sure looks like the Hayes McCulley listed as William's son on the 1880 census is really James Hoyle McCulley.
Roane Co marriage records show J H McCulley married Lillie Wattenbarger in 1892, and married Lillie Howard in 1911.
TN delayed birth records show George Adam McCulley born in Roane Co in 1897 to James Hoyle McCulley and Lillian Wattenbarger.
The 1900 census for Roane Co shows George A McCulley age 4, son of J Ho___ (illegible) McCulley age 28 and Lillie B.
The 1880 census for Roane Co shows only two male McCulleys age 8 or so. One is George McCully, son of Frank and Rebecca. The other is Hayes McCully son of William and Sarah. There is no James or Hoyle McCulley in the county. Actually, there isn't a matching McCulley anywhere in TN.
There isn't a Hayes McCulley of the right age anywhere on the 1900 or 1910 census.
Since William's son vanishes and Hoyle appears from nowhere, and their ages match, I think they must be the same person.
