Notes:

Warning: I am not absolutely certain that Adam and Jacob Zentz of
Baltimore Co MD are the same as Adam Sentz of Franklin Co VA and
Jacob Sentz of Botetourt Co VA. I am basing my conclusion on these
facts:

I know Christian Zentz had sons Adam and Jacob from church records.
From the same records I know that Adam had children George and
Catherine, and that Jacob's wife was Christiana.

Adam and Jacob both disappear from Baltimore after the 1790 census.
Adam and Jacob Sentz appear in VA around 1800 in Botetourt and
Franklin Cos, which adjoin. Their ages match the Zentz brothers.

Franklin Co records show marriages for Adam, George, and Catherine
Sentz. On the 1820 census George and Adam are on the same page.

Botetourt Co records show marriages for Christina and Sarah Sentz,
daughters of Jacob, and a George Sense whose father is not given.
Their ages agree with the children of Jacob's census entries.

Since so many details agree, I conclude Adam and Jacob moved from
MD to VA.

Jacob was definitely born a Zentz, but seems to have spelled his name Sentz after he left MD.
I suspect he was illiterate and just accepted the way other people guessed at the spelling.

He owned land on the Purgatory River in Botetourt Co.
He appears on Botetourt Co VA tax lists from 1811 to 1836, except 1821 and 1822.
