Notes:

Since the Maryland Zentzes were Lutheran, I'm assuming Jacob was as well.
There are three Lutheran churches in Washington Co PA. One was formed in 1885, so wouldn't have Jacob's records. Bethlehem church was formed 1791. I called them and asked, but their records do not show any Zentzes. First Washington was formed 1798, but unfortunately all their 19th century records were lost in a fire.

--
I think Jacob and Margaret must have first moved from MD to Huntingdon Co PA, where their older
children were married. They then moved west to Washington Co with George and Peter, who later
continued west to OH.

--
He did not leave a will. When his estate was administered, payments were made to heirs:
Christan C Zentz, eldest son
Margaret Zentz, unmarried daughter
Peter Zentz
Jacob Zentz
Susan Confare wife of John Confare
James Thomas as guardian of John Zentz
James Thomas as guardian of Polly Zentz and George Zentz

--
On the 1820 census for Washington Co PA there is no entry that could be Jacob Zentz.
1820 census Huntingdon Co PA p91 (Frankstown twp)
Jacob Zents 2 M <10, 1 M 10-16, 1 M 16-18, 2 M 16-26, 1 M 45+, 2 F <10, 2 F 10-16, 1 F 45+
[George 8, John 13, Peter 18, Peter again, Christian 25, Jacob 52, Polly 1, Margaret 21?, Margaret 53ish]

Could this be him?
1810 census Philadelphia Co PA Northern Liberties (East) township p 200
Jacob Lentz 1 M <10, 1 M 10-16, 1 M 45+, 2 F <10, 1 F 16-26, 1 F 26-45
[Peter 8, Christian 14, Jacob 42?, x, x, Margaret 21ish, Margaret 43]

[Nothing even close in the West section.]
[That Jacob is still there on the 1820 census. His name clearly starts with an "L".]

Jonathan Casebeer [see notes for Margaret] is in Strabane township, but has no wife.

1800 septennial PA tax census, Huntingdon Co, Woodbury twp, line 151
Jacob Zents (no occupation given)

I think this is him:
1800 census Philadelphia Co PA Northern Liberties (West) township p383
Jacob Sentz 2 M 0-10, 1 M 26-45, 1 F 10-16, 1 F 26-45
[Christian 4, Jacob Jr 8ish, Jacob 32, Margaret 11ish, Margaret 33]

But I don't know why he's there. He should be in Huntingdon Co PA or Baltimore Co MD, or in between.
There are several "Zen" families in York Co PA, just north of the part of Baltimore Co where the Zentzes
lived, but none of the Jacobs matches this one.

1790 census Baltimore Co MD p32 [Patapsco Lower Hundred]
Peter Sentz 3 M 16+, 1 M 0-15, 5 F
[Jacob is 22. He should be married and have a daughter.]
