A book of early TN marriages shows a Simeon Hinds marrying 1811-04-02 Judith Miller. I'm not sure it was this Simeon, but he seems the most likely.

LDS site has this Simeon as the one who married Judith Miller. It has his birth date as c1779-08-11, and death date 1840-12-13.
The death date is actually for his cousin Simeon, who was in Overton Co TN.
